Guacamole!

I love guacamole. My kids love guacamole. Everyone should love guacamole. Celebrate it! We use it on tacos, burritos, tamales, toast, chimichangas, everywhere we can.

First lets talk about avocados. There are so many memes and drama about how they are good one day and gross the next. Let me help you! If I’m not using the same day I buy them I look for the greenest ones that still have a stem attached. If the stem is gone it will ripen there faster and may be gross in that area. Let them sit on the counter until they are soft enough to lightly squish with your fingers, for me, that is usually 2 to 3 days. Once they reach this stage PUT THEM IN THE REFRIDGERATOR. They will last for at least week and as long as a month. No need to have avocado drama ever again!

5 or 6 soft avocados
Juice of one lemon (around 2 tbsp if using a bottled variety)
1 1/2 tsp garlic powder
1 tsp cumin
1 tsp salt
1/2 tsp black pepper

Add every thing to a bowl. Mash it with a potato masher or a fork. I like to leave it a little chunky because I’m lazy.

Add it to everything!
