Full disclosure, I am not a huge fan of pineapple upside down cake. Once in a while I will eat a piece of it. But my family? They eat it ALL. There are never any leftovers of this cake when I make it. In 24 hours it’s all gone. I have had some family members request this repeatedly when we visit and then shake their heads in disappointment if I forgot.

Pineapple Upside Down Cake

¼ cup dairy free butter
½ cup brown sugar
1 can of pineapple rings
Maraschino cherries
½ cup or more of chopped pecans
Cake
2 flax eggs (1 tbsp of ground flax and 3 tbsp of water per egg)
1/3 cup of melted coconut oil
1 cup of granulated sugar
½ cup of almond milk
A splash of vanilla
1 ½ cups of flour
2 ¼ tsp of baking powder
½ tsp of salt
Preheat the oven to 350 degrees F
For the Topping, melt the butter and pour it in a 9 inch square baking pan. Sprinkle the brown sugar evenly over the butter. You should have room to place four pineapple rings on the bottom of the pan—place a maraschino cherry in the center of each pineapple ring. Sprinkle some chopped pecans over everything (I take pecans halves, put them in a sandwich bag, and bash them with a rolling pin until they are the right size for me). Add some extra cherries around the outside of the pineapple rings and in the corners. Set aside.
For the Cake: In a small bowl mix together the flax egg and wait a few minutes until it is slightly gelatinous. In a mixing bowl with an electric beater, beat the flax eggs, melted coconut oil, sugar, almond milk, and vanilla together until well combined. Add the remaining dry ingredients until mixed (don’t overdo it). Add some chopped pecans, if you like.
Pour the batter over the pineapple topping.
Bake for 40-45 minutes—test with a toothpick to make sure it’s done.
Let it cool for around ten minutes then make sure the sides are loose from the pan with a knife and invert onto a serving plate. Scrape all the brown sugary stuff still in the pan onto the cake and serve. Sometimes some of the pineapples stick, sometimes they don’t–regardless, if you’re careful scraping them out and placing them where they were no one will know the difference.
