
This recipe uses the tofu scramble recipe sauce to make something much beloved by vegans, vegetarians, and carnivores. I have made this on multiple occasions for people who have never eaten tofu or didn’t even know what tofu was. They all ate the whole thing.

1/2 or 1/3 of a 12 or 16oz brick of tofu
4 English muffins
Optional:
vegan deli ham or other luncheon (we usually use tofurky)
Vegan sausage patty
Vegan cheese slices
Sauce:
1/3 cup nutritional yeast
1/2-3/4 cup plant milk (unsweetened)
1 tbsp yellow mustard
1-2 tsp garlic powder
1/4 tsp turmeric
1 tsp salt
1/2 tsp black pepper

First cut a thick slab of tofu, maybe half an inch–one brick of tofu should make about 6-8 sandwiches but we usually make them four at a time. If you really want to make it like a fast food breakie sammy, use a biscuit cutter to make circular slabs of tofu. I’ve done this before but am too lazy to do it very often. Put the slabs in the skillet and brown them up (use cooking spray if you want, you don’t have to brown them–you can heat them up until they’re warm and it’s good too but we prefer browned up a little bit–tofu always gets firmer when you cook more water out of it).
While the tofu is browning/warming up, start toasting your English muffins. My family likes them very lightly toasted so they are still mostly soft.
At this point I add one slice of vegan deli meat or sausage and half a slice of vegan cheese to one side of the English muffin (I usually cut deli slices into thirds so I can stack them onto the muffin without them hanging over the edges).
Now mix up all the sauce ingredients into a bowl. Taste it and adjust the seasoning, if necessary. The mixture should not be too thick–add more plant milk, if necessary. If the mixture is too thin, don’t worry, it will cook out after you pour it on the tofu.
Pour the sauce into the hot pan with the tofu and cook until it thickens up–it should only take a minute or two if your pan is hot–if the sauce is too thin it will take longer. Be sure to move the tofu around so the sauce gets underneath. I always grab the other English muffin half and dip into the sauce before it gets too thick–the sauce should completely cover the sandwich side of the muffin after dipping.
Assemble the sandwiches. The kids insist on having them cut in half. Enjoy.
For a spicy variety, I have also added to the sauce 1 tbsp of sambal oelek chili paste (Huy Fong is my favorite) or garlic chili paste. Really makes it good.
