Chocolate Chip Banana Nut Muffins

Wet ingredients:
3 ripe bananas, mashed
¼ cup of nut butter (I’ve used almond, cashew, and peanut butter)
½ cup of coconut or brown sugar
½ cup of almond or oat milk
1 tbsp of apple cider vinegar
Dry ingredients:
2 cups of oat flour, whole wheat flour, or all-purpose flour
2 tsp of baking powder
1 tsp of baking soda
1/2 tsp of salt
Add-ins:
Dairy free chocolate chips and walnuts, measure with your heart; dairy free chocolate chips and coconut; or pecans/walnuts, craisins, & raisins (I also add 1tsp of cinnamon with this combination); you can also add some cocoa powder to make chocolate muffins.
Preheat the oven to 350.
Mix the wet ingredients.
Add in the dry ingredients and mix. I don’t mess with doing it separately, just add each dry ingredient on top of the wet ingredients.
Lastly, fold in whatever combinations of add-ins you like.
Fill the muffin tray. I use a silicone muffin tray – if using a muffin tin spray with cooking oil. Makes 12 muffins. Bake on center rack for about 25 minutes.
